Cottage Cheese Lemon Bake

Ingredients

  • 24 oz of cottage cheese
  • 2 lemons juiced
  • 1/2 teaspoon baking powder
  • 3/4 cup of Splenda
  • lemon zest from half a lemon
  • 2 eggs

Directions

  1. Preheat the oven to 375 degrees
  2. Blend cottage cheese and eggs until smooth.
  3. Add Splenda, lemon juice, lemon zest and baking powder
  4. Stir until all ingridents are mixed in
  5. Place a mixture into a casserole baking dish aka deep glass baking dish
  6. Bake at 375 degrees for 35-40 minutes or until the middle jiggles slightly
